Healthy Muffins for School Lunchboxes 🧁

These muffins are a fun and healthy snack, perfect for school lunchboxes. They’re simple, nutritious, and you can add your own toppings like chocolate or nuts for extra flavor. Here’s how we made them:

Ingredients

* 2 eggs 🥚

* 1 classic water glass of sugar 🍚 (whisk until light and frothy)

* 3 tablespoons of cocoa powder 🍫 (I sifted all the dry ingredients)

* 1 classic tea glass of vegetable oil 🛢️

* 1 water glass of milk 🥛

* 1 packet of baking powder 🌟

* 1 packet of vanilla 🌿

Optional: chocolate chips, breakfast chocolate, walnuts, hazelnuts 🌰 (for garnish)In a large bowl, whisk 2 eggs and 1 glass of sugar until frothy.

Sift 3 tablespoons of cocoa into the mixture. I also sifted all the other dry ingredients to avoid lumps.

Add 1 packet of baking powder and vanilla to the mixture and stir gently with a fork or spoon, avoiding the use of a whisk so the foam doesn’t collapse.

Add 1 tea glass of vegetable oil and 1 water glass of milk, and mix gently until combined.

Fill the Muffin Cups

Spoon the batter into muffin cups, leaving a finger-width space at the top.

You can add chocolate chips or breakfast chocolate inside the batter, and top with walnuts or hazelnuts for extra texture. (Since I made these for school snack, I kept it simple, but feel free to decorate as you wish!)

Preheat the oven to 160°C (320°F).

Bake the muffins for 30 minutes, but make sure to not open the oven for the first 15 minutes so they rise properly.

Check the muffins with a toothpick—if it comes out clean, they’re ready!
